Salmon Recipes Times Two – One With a Layer of Pesto, One For Lunch

Recipe Number 1.
Whole Oven baked Salmon With Pesto And pine nuts. This recipe is for ten servings – change accordingly to how many that will eat – and takes 30 minutes.

Ingredients, are the following:
900 gram salmon
0.5 tea spoon salt
4 table spoons pesto
0.75 creme fraiche
70 gram pine nuts

This is how this dish is made:

Put the oven on 180 Degrees Celsius. Roast the nuts in a dry teflon-type fry-pan. Put the salmon filets, skin down, in an ovenproof dish. Salt lightly.

Mix pesto and creme fraiche. Taste with salt and pepper, and pour the mix onto the salmon. Fry in the oven for about 15 minutes – until the core of the fish is pink; 25 minutes if you want to thoroughly fry it. Pour the pine nuts over.

Recipe Number 2.

Salmon Pie For The Lunch Box

Ingredients for the pie shell:
2.5 dinkel flour
100 gram butter
100 gram cottage cheese

Ingredients for the filling:
200gram smoked salmon
2 eggs
2dl cream for cooking (what is the right word?)
dill
1.5 shredded non-fat cheese

This is how you do the pie shell:
Hack the ingredients for the pie dough, and press them out in the form. Put in the fridge for about an hour.

Put the oven on 200 Degrees Celsius. Bake the pie dough for 15 minutes, and let cool down.

You do the filling this way: Cut the salmon into smaller pieces, chop the dill. Allocate, for lack of a better word, the salmon pieces and dill over the pie shell.

Blend eggs, cream and cheese. pour this over the salmon and bake in the oven for about 25 minutes.

Freeze in serving size bites.
