Paleo Lunch
Ideal Paleo lunch options are easy to prepare and can be packed to take to work or school. Like any other Paleo meal, the key is planning in advance. Proper planning is the essential ingredient in success with any diet.
In my household, I prefer to make double batches of every dinner. I then pack a portion for the next day’s lunch and freeze the remaining for another day. If I do not have a leftover option, I opt to make an easy salad.
Here is my favorite salad recipe:
Arugula Artichoke Salad
1/3 pound fresh arugula
1/4 cup fresh lemon juice
1/3 cup olive oil
3 or 4 artichoke hearts, chopped
sea salt and pepper to taste
In a small bowl, whisk together lemon juice and olive oil. Add salt and pepper to taste.
Place arugula in a large bowl. Mix in artichokes and drizzle with dressing. Toss well.
Fresh lunch:
BLT Lettuce Wraps
3 slices of bacon
Sliced avocado
Chopped chicken – grilled, broiled, or rotisserie
Paleo mayo
Romaine lettuce leaves
Place ingredients in romaine leaves standing like a taco shell. Enjoy!
Here is favorite recipe for leftovers:
Fresh Herb Meatballs
1 pound ground beef
1pound ground pork
1/3 onion, minced
1/3 cup fresh basil, finely minced
1/3 cup fresh parsley, finely minced
1 cup spinach, finely minced
4 eggs
1/3 cup almond flour
1 T dried oregano
4 cloves garlic, minced
sea salt and freshly ground pepper, to taste
Preheat your oven to 350 degrees.
Combine all ingredients in a bowl and mix well to combine. You can use a food processor to chop the herbs and spinach into a finer mixture before adding to the meat, if you wish. Season with sea salt and pepper.
Make golf ball sized meatballs and place them on a baking sheet with sides. Cool for about 25 minutes or until well done.
