Rice Salad -French-Style
- 4 cups cooked rice, any type
- 1 avocado
- 2 tomatoes
- 1 cup corn
- 1 small shallot finely chopped
- 1-2 hard boiled eggs, chopped or sliced
optional:
- 1 cup black beans
- 1- 4 oz. can tuna, packed in water, drained, or
- 1 cup chopped ham or turkey or smoked tofu
- Seed tomatoes and chop, dice avocado. Toss all ingredients into large salad bowl, add dressing and toss well. Chill until ready to serve.
- dressing options: traditional French vinaigrette: 4 tablespoons olive oil, 3 tablespoons red wine vinegar, 1 tablespoon Dijon mustard, salt and pepper to taste. Whisk all ingredients together in bowl, toss with salad.
- or 1/4 cup (60 g) mayonnaise, any type, 2 tablespoons olive oil and 1 tablespoon Dijon mustard. Stir mustard and olive oil into mayonnaise and toss with salad.
