This is one of my recommended healthy lunch ideas to get picky eaters eating more veggies. It’s called Feta Chicken Roll Ups.
To make Feta Chicken Roll Ups you’ll need:
- 1 grilled or baked chicken breast
- 1 whole wheat tortilla
- Shredded lettuce
- Feta cheese
- Creamy low-fat Greek dressing
- Spinach
- Cherry tomatoes
It’s also really easy to make…
- Spread a very thin layer of creamy Greek dressing over the entire tortilla and then spread the shredded lettuce over the dressing.
- Next pile on the cheese!
- Cut up the chicken breast and lay it on top of the other ingredients. Don’t pack the tortilla too full of ingredients, or it won’t roll up tightly, which will be a messy experience all round!
- Roll the tortilla up and cut into about 5 pieces. Then slice the cherry tomatoes in half.
- Arrange the plate by placing the roll ups in the center, in a circle shape, surrounded by the cherry tomatoes. You may want to add a little bit of extra creamy low-fat Greek dressing or low-fat ranch dressing for dipping. If your child will eat black olives you can add these to the roll up.
So… how are Feta Chicken Roll Ups beneficial for your kids?
The whole meal provides a nutritional powerhouse for your children:
- The chicken provides a low-fat, low-calorie good source of protein.
- Although feta cheese does provide a lot of fat and calories, it also offers a list of positive nutritional benefits. It has significant amounts of riboflavin, vitamin B12, and phosphorus. It’s also a high protein food which is also high in calcium, but, try to use sparingly in the above recipe because of its high calorie and fat content.
- The whole wheat tortilla is low in calories and high in fiber.
- You can choose the low-fat Greek dressing, which is low in calories and fat whilst still being yummy!
- Spinach is loaded with calcium, folic acid, vitamin K and iron. It is also high in vitamin C, fiber and carotenoids. Add its lutein and bioflavanoids and spinach is a nutritional powerhouse!
- Cherry tomatoes are a good source of vitamin A which is good for healthy vision and a healthy immune system. It’s also high in vitamin C which once more, is good for your immune system, and lycopene which is a powerful anti-oxidant that promotes prostate health.
As you can see healthy lunch ideas are sure to be a hit with your kids and keep them healthy at the same time.
