When most people think of lentils, they think of vegetarians and mushy soup. Well that needn’t be the case and I’m going to show you a healthy and unique lentil recipe today that certainly isn’t designed for vegetarians.
Why would a non-vegetarian possibly eat lentils though, I often ask myself? I guess primarily for health – they are high in protein and Iron contents well as dietary fiber, folate and Vitamin B. They are so healthy in fact, that Health Magazine voted them as one of the five healthiest foods – along with Olive Oil, Soy, Yoghurt, and Kimchi (Korean spicy raddish and cabbage). However, the ingredients we are using today make this recipe less healthy and more tasty, I suspect.
Lentils with Bacon and Banana:
– 9 oz of lentils
– 3 sausages
– 3.5 z of bacon
– 1 banana
– Small can of tomato puree
– A small amount of onion
– Frying oil
Cook the lentils as the packet describes with a little salt. Some varieties of lentils need up to 45 minutes to cook safely, so be prepared by reading the packet. Those without their husks generally cook in less time.
Dice the bacon and slice the banana and sausage. Fry these together until the meat browns a little and the banana has turned dark brown.
Next, blend the garlic in with the puree and the onion, then add it to the pan in which you fried bacon. Heat the puree on a low flame, and once it start boiling add the cooked lentils with a little of their juice. Simmer like this for 15 minutes, and add salt to taste.
Personally, I like to serve this wrapped up in a warm tortilla with some added chilli pepper to spice it up a little, but it would also go well with rice, or some plain potatoes.
