Breakfast Casserole

This is a great way to make breakfast for a group of people. It serves about 6 and it can be fully made a day ahead of time except for the baking. When my wife’s family was down visiting, we just put one of these together the night before, then when everyone started waking up in the morning we just started the coffee, popped the casserole in the oven, and breakfast was served.

Ingredients:

1 lb ground sausage (hot or mild)

6 eggs

2 cups milk

6 slices of white bread (crust trimmed off)

1/2 tsp salt

1/2 teaspoon dry mustard (Coleman’s® is best)

1/4 lb grated sharp cheddar cheese

Brown the sausage in a skillet or frying pan and set aside to drain well. Spray a 2 qt baking dish with non-stick cooking spray. Cover the bottom of the dish with the bread. Spread the sausage over the top of the bread. Whisk up the eggs along with the milk, salt, and mustard until evenly blended. Pour this egg mixture over the sausage and bread, and then sprinkle on the grated cheese until the entire top surface is covered. Cover the baking dish and put it into the refrigerator until you’re ready to cook. When you’re ready just remove the casserole from the refrigerator and allow it to approach room temperature (about a half an hour). Then bake it uncovered at 350ºF for 50 minutes. That’s it. It’s that easy. Again, this is a great way to serve breakfast to a group of people. If you have more than six, just double up the recipe using two baking dishes.
