Hi everyone, today I am sharing one of our favourite salad recipes that tastes fantastic, is easy to prepare, and is very healthy. What else could you ask for? Let us face it, it is not rocket science. If you want to look and feel fabulous, then you need to feed your body healthy live food and exercise with the right intensity and your dreams will become a reality. Now for those of you who might already be there and just want to stay there then you will know it is the only way to keep that endless energy and beautiful physique.
The ingredients are as follows:
200g chicken breast fillets
100g baby spinach leaves
1/4 cup sliced black olives
1/4 cup chopped semi dried tomatoes
1/4 cup diced low fat danish feta cheese
1/4 cup diced avocado
Extra virgin olive oil to lightly oil grill pan
Cracked black pepper and sea salt to taste
Firstly heat a grill pan that is oiled lightly with cold pressed extra virgin olive oil on a medium heat. When pan is ready add the chicken breast fillets and cooked them for about 5 minutes on each side or until the chicken is cooked through and a browned lightly. Only turn the chicken once during cooking and keep it covered lightly with a piece of foil to maintain moisture. Remember chicken breast is beautifully lean and therefore you do not want to overcook it. Once cooked season with some cracked pepper and sea salt and rest it whilst you prepare the remainder of the ingredients.
Wash and drain spinach leaves well. Slice your olives if you are unable to purchase sliced olives. Chop your semi dried tomatoes into smaller pieces and dice your avocado and feta cheese. Now slice or chop your chicken breast into small pieces.
If you like you can add some Balsamic Vinegar to taste or sometimes I mash the avocado with some balsamic vinegar and a little olive oil and mix this through the salad. Good appetite and remember fresh is best.
